Spices Used in Tibetan Cuisine

In Tibetan cuisine, spices are used to add authentic flavors. These spices include Sichuan peppercorns, fresh and dried chiles, ginger, and Indian garam masala for curries.

Traditional Tibetan cooking methods are primarily boiled, fried, and stewed foods. During recent decades, vegetables have started to appear on the menus of restaurants and in home kitchens.

Common Spices

Tibetan cuisine is characterized by a blend of Indian, Chinese and Nepalese influences. It features hearty soups, dumplings, noodles and spicy sauces.

The typical diet of Tibetans is based on barley, meat and dairy products. This cuisine is adapted to the high altitude and extreme climate that the region experiences.

Grain is king in Tibet and this is particularly true for barley, which provides the bulk of their carbohydrate intake. Meat and dairy products are also important for their energy.

In this arid environment, most of the vegetation is sparse and therefore it’s crucial that Tibetans use protein rich foods to keep them going. Grass-fed meat and dairy from goat and yak are the main sources of protein.

One of the most popular dishes in Tibetan cuisine is tsampa, a mixture of barley flour with butter tea and dri cheese (yak cheese). It’s often served alongside a bowl of thukpa, or a spicy vegetable and meat soup.

Garam Masala

Throughout India and South Asia, Garam Masala is a popular blend of ground spices used to flavor dishes such as curries. It has a warm and aromatic flavor that is slightly sweet and not particularly spicy.

Typically, it includes cinnamon, cloves, cardamom, nutmeg, and black peppercorns. It can also include cumin seeds, coriander seeds, fennel seeds, bay leaves and other spices.

It is a traditional aromatic spice blend that is not only delicious but also offers several health benefits. It is made from whole spices that are toasted to release their fragrant flavors, then ground to a powder.

It is a popular addition to Indian curries and biryanis as it provides depth of flavor. However, it is best to make it from scratch because store-bought versions usually lose their flavor when they sit on a shelf for long periods of time.

Thukpa

Thukpa, a thick, spicy noodle soup originating from eastern Tibet, is one of the most popular foods in the region. Typically, it is prepared by boiling beef/ pork/ chicken bones in lots of water to which a few spices are added.

It is a comforting dish that keeps the Tibetans warm and cozy in winters. It is also served on New Year, marriages and other occasions.

Tsampa is a type of flour milled from barley, which forms the staple food of Tibetan cuisine. Other staples include soup, noodle dishes, dumplings, and cheese made from yak milk.

The cuisine varies considerably from place to place, depending on the economics of local villages or settlements. In agriculturally based areas, meat is typically yak or goat, dried or stewed with potatoes and other vegetables.

In some areas, rice is the main grain, but wheat and buckwheat are also farmed. Other staples include koendain, a pastry made from roasted barley and yeast (fermented into a light barley beer). Butter tea is a national beverage.

Tsampa

Tibetan cuisine is very much influenced by the region’s harsh environment, with foods and drinks that are suitable for high altitude living. Grains and meats are a key part of the diet.

One of the main staples of Tibetan food is tsampa, which is made from roasted barley flour that is grown throughout the plateau. It is a high-calorie and protein-rich food that is useful for keeping warm in the cold winters of Tibet.

It is traditionally eaten with butter tea and powdered dry yak cheese. Using their hands, Tibetans/Sherpas mix and knead the dough into a cake-like form that they squeeze into their fist, which is called paag in Tibetan.

Adding salt and ghee to the dough can help improve its texture and flavor, while other elements may be used as well. Many tsampa dishes are accompanied by butter tea, which is a popular beverage that helps keep people warm in the harsh environment of the Qinghai-Tibet Plateau.

Frequently Asked Questions

What's the difference in cooking with whole vs. ground spices? Ground Spices?

There is no difference in cooking with whole spices and cooked with ground spices. All spices are ground after harvesting. It doesn't make a difference in terms of quality.

However, the price difference is substantial. Because of the labor involved in making whole spices, they cost more. The flavor is well worth the effort.

When you buy bulk spices, you may get additional discounts. An example: If you buy an entire bag full of cinnamon sticks, you might get a discount.

The same is true for nutmeg cloves ginger, cardamom, and ginger. You may be able save money if you buy these spices in bulk.

Whole spices also last longer than ground spices. Ground spices quickly lose their potency due to oxidation.

But the main reason why we recommend purchasing whole spices is that they add a lot of character to recipes.

For instance, you can make a delicious curry with whole turmeric instead of ground turmeric. Or you can grind whole coriander seeds to create a spice blend for chicken dishes.

Grinding spices takes time. It is sensible to purchase large quantities when buying whole spices. So you don't run short of spices.

What Thai spice should I use to cook Thai food in my own kitchen?

You will need to know five key spices in order to make authentic Thai food at your home: cayenne pepper, coriander seeds and turmeric. Each ingredient has a unique flavor profile and plays an essential role in creating delicious dishes.

Black pepper enhances the savoury flavors of curry powder, while cinnamon gives it sweetness. Coriander seeds provide a spicy kick and turmeric gives curry powder the yellow color it is known for. Cayenne peppers provide heat and cilantro provides freshness. Finally, cinnamon adds depth and complexity to any dish.

Each of these spices can be found at your local grocery, but you may prefer to buy them online.

What spices are commonly used in Thai cuisine?

Thai cuisine is known for its complex flavour combinations. These flavor combinations are made with unique and delicious spices that produce many delicious dishes.

Thai cuisine uses common ingredients such as galangal (lemongrass), kaffir lime leaves and chillies.

Each spice adds to Thai cuisine's distinct flavour profile. You will often find lemongrass in soups, curries and stews. Galangal gives dishes a peppery flavor; chilies add a spicy kick to dishes. Shrimp paste adds umami depth to dishes. Coriander adds a mild yet fragrant aroma to dishes. Cumin adds a smokey flavour to dishes. Turmeric gives dishes a bright yellow hue.

Combining these spices together creates complex flavour profiles, which are unique to Thai food. Mixing spices together can make dishes both tasty and aromatic. You can bring Thai flavors to your kitchen by stocking up on these spices.

How To Make A Garlic Press?

A garlic press can be one of the most important tools in a home cook's toolbox. It allows you to efficiently mince garlic into a paste or puree it into a smooth sauce, soup, or salad dressing. You can also crush whole garlic cloves to make buttery spreads or garlic seasonings.

If you don't yet have a garlic presse, you may be wondering where to get one. Here are some tips to get you started.

First, you will need a large bowl. Place the bowl beneath the press, and then pour the crushed garlic in it. Set the pressure regulator valve at the maximum setting.

Next, rotate the handle clockwise until it clicks. The top of the press should lift up and expose a flat surface. This will allow you slide the blade back-and-forth over the bowl. Continue turning the handle counterclockwise to close the blades.

Finally, remove the pressed garlic and enjoy!

Here are some more ways to use this versatile instrument:

  • Add minced garlic to soups, sauces, salads, and dips (or even as a seasoning)
  • Use the press for whole garlic cloves to make a buttery spread
  • Make pizza dough by crushing whole cloves.
  • Combine roasted garlic with mashed potatoes and creamy polenta
  • Use the press to mash garlic into homemade pesto
  • Puree garlic in a smooth vinaigrette
